Vegetarian Cranberry & Nut Baked Rice



1 onion - peeled and sliced plus oil for sautéing

100g walnuts - chopped

half a packet of dried cranberries

1 tin of mushroom soup

200g arborio rice (100g per person)

black pepper

good pinch of dried herbs - whatever you have available


Method:preheat your oven to 180/gas6

*in a pan add a swirl of oil, add your onion and sauté until it starts to soften, then transfer to an ovenproof dish

*sprinkle over your walnuts and cranberries

*sprinkle over your rice evenly

*put all your can of mushroom soup in a saucepan or jug, refill your can with boiling water and add to the mushroom soup, making a thinner mushroom stock

*carefully pour your mushroom stock over the onion, nuts, cranberries & rice

*season with black pepper and sprinkle over your chosen herbs*cover with either a lid or with foil

*bake in the preheated oven for 30 minutes


This makes a tasty no fuss risotto for 2 persons
